What Series 9 adds
Brighter display
Apple lists maximum brightness of 2,000 nits for Series 9 and 1,000 nits for Series 7. The difference can help in bright outdoor conditions. It does not make the display larger, and it may not matter much if you mostly use your watch indoors. Apple describes Series 9 as twice as bright as Series 8; that comparison is not with Series 7.

Double tap and Siri
Series 9 adds a double-tap gesture for selected watch actions, useful when your other hand is occupied. It also supports on-device processing for some Siri requests. That does not mean every Siri request works offline. The available features depend on the request, language, region, software, and connection.
Temperature sensing and sleep features
Series 9 adds wrist-temperature sensing, which can support cycle-tracking features including retrospective ovulation estimates. It also supports sleep-apnea notifications. These features may be useful for eligible readers, but they are not a general-purpose thermometer or a sleep-apnea diagnosis. Availability can depend on region, age, software, and regulatory conditions; consult a healthcare professional about health concerns.
More storage and newer wireless hardware

Both models have 41mm and 45mm case sizes, an always-on display, ECG capability, 50-meter water resistance, IP6X dust resistance, and an Apple-rated 18-hour normal-use battery life.
